WINEMAKING PHILOSOPHY
The grapes are destemmed and transferred in the tank of red vinification The fermentation begins spontaneously, with indigenous yeasts.
Daily frequent and short recycling. After a long maceration, the free run must is transferred to a tank, where the malolactic fermentation takes place.
A 15 months maturation follows in French (70%) & American (30%) oak barrels. The wine is bottled without being filtered.
TECHNICAL DESCRIPTION
Enjoy a profound bouquet of black and red fruits, spices, and a noble oak touch as well as a dense body with both, warmth and freshness, fine tannins, and a long finish as it reveals the true character of Mavrodaphne.
